Weiss to Take Over as Mad Fox Head Chef

In two weeks, Mad Fox Brewing Company will have a new person leading its kitchen, just six months after introducing its last head chef.

Travis Weiss, the current executive chef at Ted’s Bulletin on Capitol Hill, will take over the reins at the Falls Church brew pub later this month, returning to the restaurant he worked at previously under original Mad Fox chef Russel Cunningham. Weiss left Mad Fox after Cunningham was replaced by Andrew Dixon in 2012.

Wanting to get the food back to the way it was during its first couple of years, Weiss says the focus will be casual rustic comfort food with a high emphasis on utilizing beer as a component. He says he’s excited to get back to his roots and passion, especially when it comes to burgers. “Epic burgers, my way, will be back,” he told Burger Days. “As well as the original bacon jam, which was my recipe.”

Weiss, whose first day at Mad Fox is Wednesday, September 24, replaces chef Brian Wilson who joined the Falls Church restaurant just this past March.
